Chilled Dill Soup

Ingredients:

1.)     750ml water or vegetable stock

2.)     225 Gms potatoes chopped fine

3.)     100 Gms fresh dill

4.)     100 ml sour cream

5.)     1 onion chopped fine

6.)     Salt and pepper to taste

7.)     25 gms butter

8.)     Croutons and fresh cream for garnish

 

Method:

Wash and chop dill leaves roughly. Heat butter in pan and fry onions till soft. Add in the dill leaves. Wash the chopped potatoes and add to this. Fry lightly. Add stock or water and seasoning. Bring to a boil and simmer for 20 minutes. Remove from heat and set aside to cool. Puree it in a blender.  Stir in the sour cream and chill well.

Serve garnished with croutons and fresh cream.
