Madras Pakoda

Ingredients:

1.)     1 ½ cup rice flour

2.)     ¼ cup besan (Bengal gram flour)

3.)     4 Tbsp ghee

4.)     6 green chilies (chopped)

5.)     10 cashew nuts (chopped)

6.)     2 medium sized onions finely chopped

7.)     ½ Tsp ginger (chopped)

8.)     ¼ Tsp baking soda

9.)     2 Tbsp coriander leaves (cilantro)

10.) Oil to fry

11.) Salt to taste

 

Method:

Beat together ghee and baking soda till light and fluffy. Add ginger, green chilies, cashew nuts, onions coriander leaves and salt in and mix well. Now add rice flour and besan. Knead this mixture well for few minutes by adding little water.

Make small sized balls of the mixture and deep fry till golden brown.

Serve hot with coconut chutney or sambar.
